Vivaldi won't Quit (BigSur)

Hello All,
I discovered and installed Vivaldi because of their TAB organization as it works well for our needs.
However based on this 2018 thread:
https://forum.vivaldi.net/topic/28602/vivaldi-cannot-be-quitted/21?lang=en-GB&page=2I ended up here to report the exact same issues: multiple TABs open and the only way to exit Vivaldi is by forcing its shutdown.
What should I do??

I must add that besides opening TWO Vivaldi windows with 6 tabs each, the tabs are "anchored" (just in case it helps you troubleshoot).
ALso, I find odd that in one of the TWO windows, ALL tabs appear (not desired!) while in the other only the opened 6 in that window appear (desired!).

EDIT: RUnning clean profile as I have just installed vivaldi, no extensions at all.
EDIT: I do think there might be a connection with this too, as CPU load is insanely high when Vivaldi is open: https://forum.vivaldi.net/post/624515

When was the last time you restarted macOS?
Also are you on macOS 11.7.1?

Still on 11.7
