Changing desktop icon color on Mac

Is there a way of changing the red Vivaldi desktop icon, from red to another color?

No. There isn't such option yet.

Indeed, Vivaldi doesn't offer alternatives to the red logo, but it is possible to change app icons on Mac. I recommend searching online for "change app icons on Mac" or something similar to find relevant tutorials.

Yes, there is,Instead you may change the icon. I have this collection of icons for you:

Than, you may wish to change yourself the default app icon.
First, copy the icon
ofthat you prefer by pressing ⌘+G.
Second, go to Applications folder, select Vivaldi app, and press ⌘+I
Third, locate the default red icon and click on it, and press ⌘+VVoilà, you just changed the default red icon

Quit Vivaldi...

In Applications folder, select Vivaldi (Vivaldi.app) via its context menu (right-click) and select Show Package Contents

Open Contents

Open Resources
-
Move your chosen icons file there...

Rename app.icns to -say- app.icns.bak

Rename your chosen icons file to app.icns

Close Finder window or back out of the package...
(I changed the snapshot icons...

If you just change the icon in the Get Info window, you can change it to whatever you want! What ever's in the clipboard... But -for best results- copy the icon the system creates for your image via its Get Info icon!
(To revert to the image from the app.icns file, use Get Info, select the icon in its upper left corner and press delete.)@oldhickory30 I take it you keep the app on the desktop itself... Saves a step in the process, eh?
Personally, I think Vivaldi's stock icons are pretty classy!
