This concept is an email data collector.

In the email client you create a data structure and save it as either, csv, yaml, json or xml.

Then you select an email and select parts of that email to fill fields in that data structure then when you're done with that email Vivaldi updates your saved file.

You can then choose another email and add the same fields from that email to a new record. Later you may go back to an earlier email and add or remove a field, then the data file is updated.

If data doesn't exist for a field in the email, the user make create a tag for that field and manually update that value.

This would be helpful when you've surveyed a lot of colleagues and need to record their responses and process them.
