Typing in a [would be] search term in quick commands and pressing Enter does nothing. I'm not sure how it was before, but I think it was like in Opera 12 - i.e. it would use the default search engine if there isn't a keyword before it.

Okay, your problem didn't let me go - so here is another workaround you might use (although it still ain't perfect but I like the idea that there always is another way to solve problems with viv ^^)
So here is what I think might come in handy when handling too much tabs which are buried in stacks. Press "F2" and just type a part from the name from the website or its headline in the tab and you get suggestions from your open tabs and also from your bookmarks (if this is enabled).
Of course this requires you to remember a part of the name but I think if you work with those tabs you probably do remember said names. -
First I used the standard ffmpeg-codec - which works fine with Vivaldi 1.0. Then I installed the chromium-ffmegs-codec but it does not work.
This is what i have installed:

It's sad how far all the other browsers have fallen that Vivaldi's earliest stable releases, already with far more features than Chrome or FF, has the disclaimer "a lot more customization coming." Keep up the awesome work!

While I do not agree with you, it seems clear that there is request for both of the behaviors, so an option - as zaibon said - would be the best.
