There was something that I tried using Pumpernickel bread, and pickled radish. I was not (yet) able to get that colorful radish I was looking for, but the result in combination with Avocado was good.
How did you modifiy the spread?

When I was a child, there was only one variety of avocado with very little oil. About 30 years ago, the Hass variety was introduced, which is characterized by a large amount of oil and therefore consistency.
In fact, avocado oil is sold to season salads (very expensive US$ 15 for 500 cc):
The bread is whole wheat Ciabatta and the avocado is molded only with salt.

So no additional lemon juice. I just learned recently that Avocado oil is used in a couple of recipes I wish to try out.
@barbudo2005 Price is a bit higher for me in Europe.

In Chile it is normally used with lemon juice, but I have read that lemon juice does not combine well with flours, so I have stopped using it.

A very delicious salad is celery with Hass avocado and olives. In this case I season it with olive oil, lemon juice and salt.

@barbudo2005 It will help keeping the color, and I can not yet think of disadvantages. Maybe I find some notice about that.

A light meal for the autumn evening:
Dressing of olive oil, lemon juice and salt (it can also be with mayonnaise).
Olives are a bonus using the same dressing.

There's a sports bar in town named Ralphies, like most sports bars their main food seems to be burgers and chicken wings. However, I just finished an order of stuffed pretzels and an Asian chicken salad.
the pretzels are filled with jalapenos and queso blanco, and come with a side of (yellow) cheese sauce for dipping. The Asian chicken salad consists of lettuce, grilled pineapple, nectarine pieces, water chestnuts, chow mein noodles and grilled chicken with a teriyaki sauce and I had a raspberry vinaigrette dressing. Along with Blue Moon Belgian-style wheat ale.
