Still anonymous while using Google login on one tab?

I use Google chrome ONLY for GMail and GoogleCalendar.
Everything else, I perform in a separate instance in another browser (currently Vivaldi), while NOT being logged in with Google.IF I log in on one tab, with my google account, OR I use the Vivaldi mail for my Gmail-account (and thus logged in), will I then still be anonymous/invisible for Google on all other tabs ?? (Or is it better to keep my Google Apps separate)

@Brumpie I assume you stay invisible if you have at least certain safeguards in place.
I follow the recommendation to use two extensions instead of the internal blockers.

When you log into a service like Google, they can set third party cookies which can be seen on other pages (in the same tab or other tabs) where their content is loaded. You can disable third party cookies in the Vivaldi settings, but that can sometimes break websites, but you can try it if you would like to. For what you want, separate profiles are best. You can also use private browsing to log in to Google accounts, and non-private for other content, but this has all sorts of side effects.
Vivaldi has the concept of profiles. You can be logged into Google accounts in one profile, and that is completely separate from your other profile where you do your browsing. They can have completely different settings, etc.

Note that Google can still set third party cookies to track you even if you are not logged in, since their content is loaded on a huge number of other websites. They may not know which Google account to connect that information to, but they are still able to track that "the same someone" is browsing all those sites. At some point, they might be able to gather enough data to make a guess as to which account to connect it to. You may want to use Vivaldi's tracker blocking feature to prevent the majority of tracking.
