how to force vivaldi to open all pages in incognito mode every time? I set up speed dial in incognito now it's all reverted to regular. Why is a private browswer so difficult on basic privacy issues that should be immediately user friendly?

You could open the whole Profile in incognito using
--start-in-incognito
from Terminal.
It would have its problems for some actions.I don't know the way macOS uses to create a Shortcut, in Windows, you can add the line at the end of Target.

Also, the option to never save history is missing. My search bar is disabled and after deleting browser history, the entire history appears in search bar!! Very invasive. Please advise how to remove search history permanently!

If this is in Default, try on a Clean Profiler (User icon on the Address Bar right side).If it's on the Incognito, I will need to test it.

@Zalex108 apparently there are two profiles? one standard, one incognito. Vivaldi is set to open automatically at login. how to make it the incognito profile open automatically. and how to delete the other version without affecting incognito?
I found this but need for mac C:Users<user name>\AppData\Local\Vivaldi\Application\vivaldi.exe

When you create a New Profile from V Profile Manager, it should allow you to create a ShortCut on Desktop, you can use it as a Template and try modifying that.
The theory is, 1 Default Profile accessed Normal or in Incognito.
Then,
To open it, it is necessary to invoke it with the Command Line Switch.You can Clone your current Profile, create a New Profile, use its ShortCut, Open it, Close, Paste the Cloned Profile there and test.
About ShortCuts,
On Windows, you can add the Modified ShortCut to the Start/Run and it works.--
So first:
- Clone the Current Profile / Also as BackUp
- Find out the way to create a ShortCut or a CMD file to run as ShortCut if New Profile isn't enough
- Test the InCognito Profile
- Add the InCognito ShortCut to the Run
