Side panel not showing mobile version of sites

I have added gmail and twitter to my side panel, and I have clicked back and forth between "show mobile version" and "show desktop version" but both views are the desktop versions of those sites, which makes them nearly useless b/c of the real estate their desktop-layout sidebars use. Is there some other setting I need to use to get the mobile versions showing in the side panel?

To force it to load the mobile version, you can use m.gmail.com.
I agree that gmail is not responsive to the "show mobile/desktop version" command. The only way I can get it to switch out of mobile is to do it using google's links within the panel, and then it will switch to the plain html version and I still have to tell it to use the standard. Once I'm in the standard version, I haven't found a way to switch back to mobile.
I prefer to use it in standard view with the sidebar collapsed, though. The mobile version just lacks too much functionality.

@Gwen-Dragon the context menu is what I used to switch back and forth between desktop and mobile versions, which reloaded with only the desktop versions each time. I even closed and reopened the browser before trying that again. Still no dice.
I've used the mobile address for gmail to force it, but alas, even "https://mobile.twitter.com" isn't pulling up the mobile site in vivaldi at all, so that's a wash. -
