Is this definitely happening because of the flag, Or is it that web servers now have https redirection / HSTS turned on for the sites you've tested?

I ask because the prefix omnibox- makes me think that this flag would only apply to the chrome address bar. As vivaldi has a separate implementation, it might not work the same way.

I guess there's not really an easy way to find out what's happening exactly, but it's good that you're finding your day to day browsing to be secure sans extension.
