Situation: Opened empty draft, typing To: address and as there are some guesses by search as I type, the first is always wrong in my case. It suggests me an address, that is not valid anymore. (It is an address of the same person I want to send mail to, but for the former company.)
It would be nice, if I could tell M3 client somehow, that I don't want this first found address to be first offered, i.e. "this address is on deny list for send to". Maybe the "deny to: address" list will solve it nicely. In case I click submit, M3 will warn me "Hey, are you sure willing to send to THAT address?" Then I knock my forehead with finger (aha effect), cancel operation and will correct the draft. And finally send to correct address.
Sorry for long story, cannot explain it fully in short.

this is not implemented well (yet?), I agree.
You can edit the contact in the contacts panel, add all email addresses that belong to that contact there. The one at the top is the first address that will show at the top when you start typing that contacts name in the to field.
The mail addresses can be set as "default", "work" etc. but I don't see any effect of that as of yet.
