Using Vivaldi headless for screenshots -

I'm trying (amongst other options) to use vivaldi headless to capture a bunch of screenshots of Twitter bios.
If I try it without the user data directory specified, like so:
vivaldi-stable --headless --no-sandbox --disable-gpu --window-size=1200,900 --screenshot https://twitter.com/teamvivaldi
then I get this: image url)
If i try it with the user data directory specified, thus:
vivaldi-stable --user-data-dir=/root/.config/vivaldi/ --headless --no-sandbox --disable-gpu --window-size=1200,900 --screenshot https://twitter.com/vivaldibrowser
(in the hope that it will pick up my login), I just get this:
Even more confusing to me is that when I'm operating Vivaldi manually on twitter, the bio view I get is this (which is ideal because the bio can be clipped out as a neat square(ish))
Anyone got a clue wtf is going on? Anything I can do?
