I appreciate that the negative space is that amount specifically so it can fit the "Show more" option's fields, but given how they're, well, not displayed by default, whereas the folders are... feels a little odd to not make use of that space in what is presumably the majority of cases (otherwise "Show less" would be the default, right?)
If it's just switching between the two sizes for the folder view, that doesn't feel too taxing. One view that truncates would probably be better still, so there's no need for scrolling the entire screen - which clearly would be bad UX.
This is a question that can be discussed.
I also have a foldable phone. Some of the sites I visit regularly, when using Vivaldi's mobile mode, deliberately block some content and direct you to its dedicated app. If I don't want to install too many apps, I want to still use desktop mode even when the phone is folded.
So I think that if the browser wants to increase the automatic detection of whether the phone is currently in an expanded or collapsed state, it should also give the user an option to allow the user to decide whether to automatically switch the desktop mode/mobile mode, instead of forcing a hard switch on their own.
Going further, I think app optimization on flexible screen mobile phones is a systematic project, which may require the entire industry ecology to evolve together. Neither software vendors nor hardware vendors can do it independently.

I faced the same issue (Vivaldi For Android not showing the other Desktop sessions) so i applied the tips from https://help.vivaldi.com/article/troubleshoot-sync-issues/, "Remote sessions" topic and it worked.
This is a very harmful article! I applied tips from the article on the one of my desktop Vivaldi and now I have two sessions with the same name as this desktop has, but mobile Vivaldi still show nothings 😞 But today I glad to say what bug was fixed in the latest mobile version (2.9.1741.33)!!!

Google knows better than developer what is key functionality of app
But if course, grumble knows all. Can even read your minds (I wear a tinfoil hat).
@Nordlicht Fairemail is great and can read Vivaldi mail, but I think it is a little too complicated because of things that the average smartphone user (and probably average email user) doesn't understand. Like I still don't understand POP3 and IMAP, I was only able to get Fairemail to handle incoming Vivaldi mail by fumbling through the setup process and guessing as to which settings to use. I know Fairemail handles a lot of the setup automatically, but still, I personally have been/was confused initially. A Vivaldi mail app/interface that is simpler would be greatly appreciated.
