Unfortunately, it's not simple, as an extension can't interact with a browser mod.

Oh holy great Zarquon, this is simply too amazing, i'm gobsmacked & speechless. All this time there's been some rich sub-stratum of "special knowledge" available only to The Illuminati to unlock unsuspected treasures inside Vivaldi. I've used Vivaldi since Feb 2015 & only just now ffs do i stumble across this gem - i can't believe it. Still not grasping what people were meaning, i then was intrigued by @lamarca https://forum.vivaldi.net/post/253973. Even then it was not til page SIX of my "show version number in Status Bar" search before i found this thread -- surely this is the V equivalent of Arthur Dent's exasperation about his local council's planning authority notification for demolition being hidden in the basement locked filing cabinet!! However, now that i finally understand, i'm able to recognise retrospectively the huge tease that @LonM provided in the follow-up post https://forum.vivaldi.net/post/253951 -- i mean that is plain evil, heehee.
No, i've not yet done today's update --- was sooo bloody distracted by this Quest For The Unknown. -
@steffie I dont get this stupid symbol. In Opera there were %t %v and to see Opera build number, a much cleaner way.

If you've turned on the version info, and are running the latest snapshot, you can add it to your address bar sans mod by typing the following into the browser inspector console:
vivaldi.prefs.get("vivaldi.toolbars.navigation", topbar => { topbar.push("VersionInfo"); vivaldi.prefs.set({path: "vivaldi.toolbars.navigation", value:topbar}); });
